Looking to take your box cake mix flavour up a notch? Want to experiment with elevating your baking skills? Well… we recently heard of a life hack that may have changed the way we Betty Crocker for the rest of our lives!
Yes! By that, we are taking about adding Mayonnaise into your mix. It may sound gross, and at first it felt gross to do – BUT, hear us out. Mayonnaise is made with eggs, oil and vinegar – so it kind of makes sense to think that it would be great in baked goods. Each of these items are crucial to baking a delicious treat, so mayo can actually be an efficient way to bake. Everything that I had read told me that mayo helps to make a cake super moist – which is a fantastic trait to have in a cake (although I’ll eat cake just about any way it’s given to me…)
So I decided to give it a try. All I had to do was substitute the same amount of mayonnaise for the amount of oil the recipe called for (in this case, ¼ cup) and then leave out the eggs. I had to add a little bit more water to get the correct consistency because it felt a little dry and I was paranoid to the core that I was being fooled into baking some inedible disaster.
Well… guess what. MY CAKE WAS DA BOMB! Yes, it was super moist, and you would never have guessed my secret ingredient had I not just told the whole world. You could not taste the mayo anywhere, but knowing it was there – I could see the effect it was having on the texture of my cake. And best of all, on the second day my cake was equally as soft.
